Why this matters

Most of us in the SCA who cook for feasts work from recipe books, and that's genuinely fine. Pulling a dish out of Le Viandier or Forme of Cury and making it well is real work. It feeds real people. I am not standing here to tell anyone that's wrong.

What I am here to tell you is that a recipe without context is a dish without a meal around it. You have cooked the thing, but you have not necessarily cooked the cuisine.

Wedding cake and coffee cake are both cakes. Without context, you might conclude that 21st-century Americans eat giant multi-tier confections every time we sit down with a friend for a cup and a snack. A recipe tells you the cake exists. It does not tell you when you eat it, who eats it, what is next to it on the table, or whether anyone outside the palace has ever seen one.

This matters double when you are working on a culture that did not leave a cookbook. Whole rich food traditions, from Viking to Mongol to Egyptian to Mesoamerican to most of the medieval world outside a few literate elite kitchens, have no recipe collection at all. If recipe books are the only tool in your kit, those cuisines are simply invisible to you.

That is not a small loss. That is most of history.

So this handout is here to give you the rest of the toolkit. The four traps to watch for in your own work and other people's. The four kinds of evidence you can use when there is no recipe. The four-tier vocabulary that lets you label your work honestly. And a real bibliography at the end, with notes on how to actually access the scholarship without a university affiliation.

One ground rule before we start. Everything cited in the bibliography is peer-reviewed scholarship, primary-source scholarly translation, or institutional publication (museum, archaeological trust, university press). No wikis. No blogs. No Pinterest. If you cannot find one of these directly, your local public library's interlibrary loan can almost always get it for you.

Four traps to watch for

These are the moves that should make your eyebrow twitch when you see them, whether it is your own paperwork or someone else's. We have all done at least one of these. The point is to recognize them so you can stop.

The Apicius trap

Treating one elite, late, patchily-transmitted cookbook as an entire civilization's cuisine. Apicius is a 4th to 5th century compilation of wealthy Roman kitchen practice. It is not what Romans ate. It is what one aristocratic kitchen produced on a good day. One recipe collection is not a cuisine. If it were, two thousand years from now historians would conclude 21st-century Americans ate exclusively from Cooking for Jeffrey by Ina Garten.

The illumination trap

Reading manuscript art like it is documentary photography. The Tacuinum Sanitatis is a medical-didactic text and the images are formulaic. A Book of Hours margin is visual storytelling: sometimes religious allegory, sometimes the illuminator was just bored. The snail-jousting knights are not evidence of snail jousting. Visual sources need source criticism the same as written ones. Who made it, for whom, and why.

The ingredient-name trap

Translation will eat you alive. "Corn" before about 1600 just means grain, not maize. "Pepper" in a 13th-century recipe could be black pepper, long pepper, cubeb, or grains of paradise. Four different plants, one word. "Almond milk" in a medieval recipe is not the carton from Trader Joe's. It is freshly made, labor-intensive, used for fast days and elite kitchens, and the fat content behaves completely differently in the pot. We translate the source, then we cook from the translation, and somewhere in that gap we have quietly made something that did not exist.

The bland-past trap

Assuming that if a source did not write something down, people did not use it. Salt does not show up in most recipes. People had salt. They were using salt. It was too obvious to write down. Same for local herbs, everyday onions, the handful of whatever was growing by the kitchen door. Recipes record the notable, not the normal. Absence of evidence is not evidence of joyless medieval soup. Our ancestors were not simpletons with broth. They were cooks.

Four kinds of evidence when there is no recipe

Every one of those traps gets worse when recipe books are your only research tool. Every one of them gets better when you triangulate from multiple kinds of evidence. Here are the four big buckets.

Archaeology

Middens, cesspits, charred grain, butchered bones, residue analysis on pottery, shipwreck provisions, food preserved in tombs and bogs. This tells you what people actually ate, and what they cooked it in. The ground does not lie, but it does not explain itself either.

Non-culinary texts

This is the biggest and most underused bucket. Medical and humoral texts, agricultural manuals, travel accounts, tax and household records, market regulations, feast descriptions in chronicles and sagas, religious dietary rules, herbals, diplomatic gift lists. This tells you what food meant, what it cost, who ate it with whom, and what was strange enough to be worth writing down.

Visual sources

Tomb paintings, manuscript illuminations, mosaics, frescoes, pottery scenes, tomb models. This tells you how things were done. Technique, vessel, posture, sequence. With the caveat from the four traps that art is never documentary photography.

Linguistic and comparative evidence

Etymology, loanwords that track ingredients across trade routes, and, used carefully, surviving folk practices in descendant cultures. This tells you where things came from and how practices might have worked, when you use it as a cross-check rather than a shortcut.

None of these alone is enough. The whole game is triangulation. When archaeology, a written source, and an image all point the same direction, now you have something. That is when you cook it.

The fifth lens: cookware

This is a tool you can take to any culture in any period, and it might be the most underused piece of the kit. A cooking vessel is a technology choice that constrains and reveals the cuisine. When there is no recipe, the pot is a recipe. The vessel tells you what was possible before you start guessing what was made.

Four questions to ask of any period kitchen.

Use cookware as your first question, not your last. Before you ask "what was the dish," ask "what could this kitchen actually do." A surprising amount of period food research collapses cleanly once you have answered that.

Using surviving practice as evidence: three rules

Sometimes a foodway has continued in a descendant or culturally-continuous population almost unchanged, because the underlying physics, ecology, or technology has not changed. Kumis fermentation in a leather bag is the same microbiology in 1253 and 2026. A sheep butchered with a knife on the ground in a treeless landscape has a limited number of ways it can go.

This kind of corroboration from living practice is a real research technique. Used carefully, it is gold. Used carelessly, it is how you end up cooking 2026 dishes and labeling them with medieval dates. So three rules.

And the move that turns it from sketchy to scholarly is to state it explicitly in your documentation. Something like: "This preparation follows [period source]; specific handling draws on ethnographic parallels in [modern descendant practice, citation], used corroboratively." That sentence is the difference between rigor and vibes.

How to label what you made

Once you have done the work, you have to label it. This is where a lot of SCA documentation falls down. Not because the research is bad, but because the label oversells the result.

Four tiers, in plain language. Naming the tier honestly is the scholarship.

A judge or a peer or a curious feast guest looking at "plausible 13th-century Mongol mutton, drawing on Rubruck" knows exactly what you did, what you did not do, and what the limits of the claim are. That clarity IS the rigor.

What you are actually doing

Here is something I want to leave you with before you head off into the bibliography.

When you triangulate from a tomb painting, a ration list, a residue analysis, and a cooking vessel, and then you actually cook the result, taste it, adjust based on what the fuel and the pot can really do, and write down what worked and what did not, you are doing experimental archaeology.

That is not a metaphor. That is the same methodology that overturned a hundred years of "everybody knows" about ancient Egyptian beer. The credentials are different (the academic researcher has a Cambridge lab, you have a feast kitchen and a notebook) but the method is the same. You read the sources. You constrain by the technology. You cook. You document. You revise.

SCA cooks who do this work seriously are not playing at scholarship. They are doing scholarship, in a venue that academic archaeologists can rarely afford, which is actually feeding fifty people the result and seeing what happens.

Take it seriously. Label it honestly. Own it.

Practical guide to accessing the scholarship in the bibliography without a university affiliation. With one critical caveat first: not every academic-looking source is peer-reviewed, and not every search tool gives you peer-reviewed results by default. Part of the skill is reading the publication info, not just the title.

The trick that does the most work: footnote-mining

This is the single most powerful research technique for non-academic researchers. Here is how it works.

Within three rounds, you have a working bibliography on a niche topic that took academic researchers years to assemble. You have done in a weekend what they did in a graduate program. The footnotes are the map.

A peer-reviewed article's bibliography also gives you something else, which is a curated list of sources the author already vetted. They have done quality control on what they cite. You are standing on their work.

This is also how you avoid the cherry-pick trap from the very beginning of this handout. Footnote-mining naturally produces a multi-source bibliography. One article is a citation. Five articles, drawn from peer-reviewed work, is a research base.

The recipe books gave us the kitchens of literate elites. The middens, the tomb walls, the travel diaries, the pots, and the bones gave us everyone else. Go feed them.

And one last thing. When you do this work, when you triangulate, label honestly, and cook the result, you are not playing at scholarship. You are doing experimental archaeology in a feast hall. The credentials are different. The method is the same.

Throw yourself in with the scullions. The kitchen is where the real work happens.
