They are made using my redactions of the translated recipes in Madame Wu’s Handbook on Home-Cooking (Song Dynasty), Pure Offerings of Rural Households (Song Dynasty), Soup for The Qan (Yuan Dynasty), and Ni Zan’s Forest Hall Collection of Rules for Drinking and Eating (Ming Dynasty)
